Canario to Bring French-Japanese-Inspired Menu to Former Woodhouse Vegan Space

A new restaurant from chef Jeremy Nelson and restaurateur Marco Piazza is expected to open soon in the Short North, in the space formerly occupied by Woodhouse Vegan at 19 W. Russel St., which closed over the summer.

Called Canario, the two-level restaurant will seat 42 and feature an open kitchen and bar. The owners said they expect to open in about a month, though they have not announced an exact date.

Nelson, who leads the kitchen, has spent about 20 years developing his skills at Michelin-starred restaurants. His cooking draws on French and Japanese traditions. The kitchen will include a French-style flat-top oven that cost $40,000, a piece of equipment Nelson considered essential.

The menu is set to include a tasting option as well as dishes ordered individually. Piazza said the restaurant is also considering a weekly happy hour from 3 to 5 p.m. before dinner service.

Piazza, a former founding partner of Atlas Tavern and Nomad Restaurant in Polaris, said the goal is to pair a more elevated meal with a welcoming neighborhood atmosphere. Canario takes its name from his dog, Beluga, a presa canario.

The restaurant is near a parking garage, and Piazza said Canario will validate parking. The owners describe the space as intimate and sophisticated while aiming to make it approachable for a range of diners.
