Cottage Grove Stoddard’s market closes while officials review food-safety corrections
Stoddard’s Meats and Catering has temporarily closed its Cottage Grove market after a Sept. 1 inspection found violations involving raw-meat handling and refrigeration. The business says it is working with state and county regulators and has hired outside food-safety help before reopening.
COTTAGE GROVE, Wis. — Stoddard’s Meats and Catering has temporarily closed its Cottage Grove market while it addresses food-safety violations identified during a Sept. 1 inspection.
The inspection found that the retail operation was not complying with an approved Hazard Analysis and Critical Control Point, or HACCP, plan for curing and reduced-oxygen packaging of raw meat. The business has submitted a new HACCP plan, which remains under review.
Inspectors also found that cold food was being stored above the required temperature. The ambient air in the walk-in cooler where chicken was kept measured 46 degrees Fahrenheit; Wisconsin food-safety rules generally require cold foods to be held at or below 41 degrees.
Stoddard’s said products made at the Cottage Grove location, as well as products now prepared in a newly licensed kitchen, were produced under Wisconsin and/or Dane County inspection and licensing oversight. The company did not announce a reopening date.
“We take all food-safety concerns seriously,” the business said, adding that it is cooperating with the Wisconsin Department of Agriculture, Trade and Consumer Protection and Dane County officials.
As part of its reopening efforts, Stoddard’s said it is hiring an independent food-safety consulting firm, restructuring management and increasing operational oversight. The company also plans to strengthen sanitation procedures and switch to a new pest-control provider.
The closure affects a local market and catering business that serves customers in the Cottage Grove area. Its reopening will depend on correcting the cited conditions and completing the regulatory review.
